The Science of Good Coffee: What Your Coffee Maker Actually Does

There’s a lot of chemistry happening inside your coffee maker. Understanding the basics helps you dial in the perfect cup every time.

Water Temperature Is Everything

The ideal water temperature for coffee extraction is 90–96°C (195–205°F). Too hot and you over-extract bitter compounds; too cold and you under-extract, resulting in a weak, sour brew.

The Bloom

When hot water first hits freshly ground coffee, CO2 gas escapes — this is called “the bloom.” Good coffee makers account for this by pre-wetting the grounds before the main pour, allowing even extraction.

Grind Size Matters

Coarser grinds extract slower; finer grinds extract faster. Drip coffee makers work best with a medium grind. Built-in burr grinders (vs blade grinders) produce a more consistent grind size, which means more even extraction.

The Golden Ratio

The Specialty Coffee Association recommends 1g of coffee per 15–18ml of water (the “golden ratio”). For a 12-cup carafe (1.8L), that’s approximately 100–120g of coffee.

Freshness Is Non-Negotiable

Coffee is best consumed within 2–4 weeks of the roast date. Store in an airtight container away from light and heat. Never in the fridge.
